Recipe: lemon strawberry rolls

With Valentines Day just a few days away, I wanted to post something fun and easy that would be perfect for a Saturday morning breakfast with the ones you love….ah, how sweet. Zaycon Foods-lemon strawberry rolls

These rolls can be made with frozen bread dough, which cuts down quite a bit of the time. I use my moms all-use bread recipe, and I’ll be sharing that with you here as well! In fact, you can be a super cheat and use store bought lemon curd too, I won’t tell.Zaycon FoodsMama’s bread recipe:

2 Tablespoons yeast

1 Tablespoon sugar

2 cups hot water

let sit for 5-10 minutes to get the yeast activated

Add 5 cups flour, 1/2 cup sugar and 1 teaspoon of salt. If super sticky, add up to 1 more cup of flour. knead in mixer for 5 minutes.

Let set for 30 minutes.

Lemon Curd: (This is a lot easier to do that you think)

3/4 cup lemon juice

1 cup sugar

Zest of 1 lemon, good fun for the kids. My kids love to use fun kitchen tools.

1 cube cold butter, cut it up so it melts faster

3 egg yolks

You are going to need a double boiler, you can make one with a saucepan and a metal mixing bowl if you don’t have one. Bring water to a boil in the saucepan, you don’t want it to touch the bottom of the metal bowl, so be sure not to fill it too high. Once its to a boil, turn down the heat and put the metal bowl on top and add to it:

sugar, lemon juice and zest and egg yolks, mix together. You need to whisk the entire time its on the heat. It will start to thicken and stick to your spoon, take off the heat and add your butter a pad at a time until melted. cover and let cool until you are ready to use it.

Putting it together:

Roll out your dough to fit an 11×17 sheet. I like to bake on parchment or a silicone baking mat. You need to spread your lemon curd out across the dough and sprinkle with diced strawberries. Roll the dough like your making cinnamon rolls. This is going to get really messy, cut 1 1/2 inch sections off your dough log. I use dental floss. Its really easy and cuts fast. This size should cut about 12-15 rolls per log.

Bake 350 degrees for 22 minutes.

glaze:

I like to make a super simple sugar glaze with powdered sugar, a little milk and melted butter. I eyeball this part. I melt 1 tablespoon of butter and add about a tablespoon of milk to about 1/2-3/4 powdered sugar. If its too thin, I add more sugar, too thick, add milk. I drizzle this on the rolls while they are still hot.

Zaycon FoodsThese are not too sweet or too lemony and a nice change from chocolate, and I am a HUGE fan of chocolate. I think it would be fun to play around with different flavors. Maybe try a peach curd with raspberries or how about orange curd with a honey drizzle.

Sunday Supper-bringing family to the table

The holiday season offers ample opportunities to gather together the family, to celebrate the many bonds that hold us together and make us stronger, and to reflect on all indeed for which we give thanks.

In fact, though, each and every family meal provides that same opportunity. Sadly, for the average American family, these meals are becoming less and less common. Consider a few statistics: according to a 2014 survey conducted by the NY Daily News, the average American watches five hours of television per day. Mind you, that’s the average, meaning many are spending even more time, up to a fourth of the day, watching TV. The average meal, however, lasts much less than an hour.

Do the math, and it’s clear to see that, in many U.S. households, people spend more time watching TV each day than they do eating as a family each week. And that is wildly depressing, as is the reported 59% of American adults who say they have fewer dinners as a family these days than they recall sharing when they were the youngsters.

family-dinner-table-y8l5mgl8The family dinner table is supposed to be the place for reconnecting, for laughing, for venting, for listening, and of course for eating home-cooked food (which is usually much healthier than options available even at the finest upscale restaurants, largely because the sodium and fat content of home-cooked meals is dramatically lower). What’s to be done, then, about the trend toward fewer family meals?Unknown

Easy. Just start a movement. Except that you don’t even have to do that, because Isabel Laessig and the Sunday Supper, LLC already did that. All you have to do is join them!

Referral credits: new policy

Hello Zaycon fans!

Chicken events started happening across the country last Saturday!! I hope your enjoying some delicious fresh chicken!

In case you missed it, there will be another chicken event this spring. Look for bacon (we like to call it “Zayc’n Bac’n” around the office) and breakfast sausage events coming up and the BEST ham ever will be coming just after Thanksgiving. Those events are open now so go order before its gone.

I wanted to let you know about our new policy with referral credits. Credits will not be seen in your account until after an event takes place in case someone needs to cancel their order, etc. This means that those credits can be used on the next event, but not the current one.

We love to hear from our customers and want to know what your doing with your chicken. Do you cook it up? Freeze it? Can half of it? I freeze half and can the other half. What are some of your favorite recipes?

Zaycon chicken for only .24 a pound?!? That’s crazy!

Only its not crazy and anyone can do it.

Our awesome and amazing President, Mike Conrad, and Vice President, Adam Kremin, were interviewed for our local Spokane Journal of Business a few weeks ago.

Did you know that Zaycon started with only a $1500 investment and there were only 8,000 customers in the 1st year? All of which were in the Northwest. Today, 4 years later, Zaycon has over 250,000 customers nationwide with 25 employees, half of which are drivers.

So, Zaycon started out as a pretty small company. Actually, a really, really small company. In fact, I remember buying chicken from one of the very first sales. The whole Conrad family was helping. Kids, adults, brothers, and cousins. The faces of Zaycon have changed over the past 4 years. It’s had it’s growing pains. It’s had its share of being beat up and spit back out, but the Zaycon family just gets back up and keeps running.

If you are ever to walk into the office, you would meet some pretty amazing people. Matt, though listed as a product/market development guy, is actually “the president of cows” since spending a lot of time working towards the launch of our Zaycon Milk Program. Scott, our graphics and branding czar has taken on the daunting task of building our new website in between every other “due yesterday” task he takes on. Rose, the first person you’ll see as you walk in, is the office caretaker, making sure everyone is well fed and healthy. If you turn down her amazing enchiladas, you have truly missed out.

Over the next few months, I’m going to introduce you to our Zaycon family . We want you to know who we are, what we do, where we are from and a few random things about us. We are people, just like you. We have families and lives outside of Zaycon. Although, I seem to live in a Zaycon world since I need to have access to Zaycon things all day everyday.

I’d also like to say, it was a lot of fun interviewing the first few of our drivers. They thought I was a little nuts with my questions, but it makes for an entertaining blog post.

Spokane customers boost their referral credits

What started as a printing blunder turned out as a great opportunity to help our customers earn referral credits. The Spokane office had printed 10,000 door hangers promoting the summer ground beef sale, but not considering the time it took for the printing company to produce a good product, it was too late to use them. The office staff put there heads together and decided to print 10,000 stickers to attach to the door hangers making them official “chicken sale” door hangers instead.

The problem we still had was how do we distribute 10,000 door hangers to all the hungry bargain shoppers out there.

The birth of an Idea

A question was posed in a high level closed door special door hanger meeting:

“Hey! Zaycon is growing anyway right?”

“Yes we are”

“Why not offer our customers a chance to distribute these door hangers and allow them to get referral credits from the new customers that register as a result of the door hangers?”

BAM! There you have it. So far so good. The response of our customers in Spokane has been amazing.
